So I have an older Technica cassette deck, amp and tuner and he all have a ground option. What is grounded to what?

Ground normally used to ground the turntable to the amp/receiver.

Is it an issue if I don’t attach the ground? I currently don’t have my turntable hooked up.

If you have hum, yes it is an issue. If your system sounds quiet, then no you don't have an issue.

What type of wire can I use for ground? I know some turntables already have the wire coming out but my cassette and tuner just have a spot to attach s ground wire.

It isn't critical. Any copper wire that fits will do.
